The review discusses how extraction and modification methods, such as sulfation and carboxymethylation, enhance RBP's functional properties, making them suitable for applications in food additives, pharmaceuticals, and cosmetics. RBPs show promise in improving gut health, acting as prebiotics, and serving as delivery carriers for drugs and bioactive compounds. Despite their potential, challenges like high production costs and regulatory hurdles limit large-scale industrial use, necessitating further research and development to fully realize their applications.
