This review highlights the potential of using the eggshell matrix, a by-product of the egg industry, as a sustainable and cost-effective source for producing glycosaminoglycans (GAGs), which are important in various industries. The eggshell matrix is rich in hyaluronic acid, chondroitin sulfate, and other GAGs, offering consistent molecular properties and lower allergenicity compared to traditional sources. The review discusses the advantages of this approach, including its alignment with circular economy principles and potential to reduce environmental waste. However, further research is needed to enhance extraction efficiency, expand industrial applications, and ensure commercial viability, focusing on process optimization, technological integration, and economic evaluation.
