specialized protein in the nose that detects odors

An olfactory receptor (OR) is a specialized protein found in the sensory neurons of the nose that detects odor molecules. When an odor molecule binds to an olfactory receptor, it triggers a signal that is sent to the brain, allowing us to perceive and identify different smells. These receptors are part of a large family of G-protein-coupled receptors and are crucial for the sense of smell.
